was inspired by this:
Spinach Pomegranate Salad
1 small bag spinach
1 bag 'spring mix' salad
1 c shredded mozzarella cheese
1/2 red onion, thinly sliced
2 c cottage cheese (reserve for later)
Dressing
1 c light olive or canola oil
1/2 c white vinegar
1/2 c sugar
1 Tbsp poppy seed
1/2 Tbsp minced dried onions
1 tsp salt
2 c sliced mushrooms
Combine all dressing ingredients and let sit overnight or several hours. Combine salad ingredients in bowl, add dressing and mix. Scoop cottage cheese on top in the center. Sprinkle pomegranate seeds on top.
Which is equally delightful and not as annoying as this incessant underliner.

Sounds Delicious! If only I could get the seeds out without inevitable squirting myself in the eye... or staining my pants.
ReplyDeleteTrick to opening these yummy fruits: fill a large bowl 1/2 full of cool water, plunge pomegranate in the water (until it is submerged, and I like to quarter it to make it faster), peel freely the seeds sink, or maybe they float. Mess free and super fast.
